I made this recipe for a "healthy eating" potluck at Albany Law School. To my surprise it tied for an award for Creative Use of A Super Food, broccoli. If you are looking for a tasty salad with all of the fiber you could possibly want, make sure you try this. It is very easy to make. I'll post a photo soon.
1 head of broccoli – cut into
small florets
2 cups of chopped red cabbage
2 carrots peeled and chopped
1 English cucumber chopped
1 avocado chopped
2 tbsp of chopped parsley
Cool the
wheat berry before mixing.
·
Blanche broccoli
in sauce pan for two minutes and shock in ice water immediately (this
helps
retain the texture and bright green color)
·
Mix all salad
ingredients except for dressing
Dressing
¾ cup of olive oil
1 cup of loosely packed
chives
¼ cup of champagne vinegar
2 garlic cloves
Salt
Pepper
