Broccoli Wheat Berry Salad


I made this recipe for a "healthy eating" potluck at Albany Law School. To my surprise it tied for an award for Creative Use of A Super Food, broccoli. If you are looking for a tasty salad with all of the fiber you could possibly want, make sure you try this. It is very easy to make. I'll post a photo soon.
 
Salad Ingredients
 2 cups of wheat berry (can be found in most co-ops or health food stores)
1 head of broccoli – cut into small florets
2 cups of chopped red cabbage
2 carrots peeled and chopped
1 English cucumber chopped
1 avocado chopped
2 tbsp of chopped parsley
       ·         Cook wheat berry according to instructions (approximately 1 hour of cooking time). 
               Cool the wheat berry before mixing.
·         Blanche broccoli in sauce pan for two minutes and shock in ice water immediately (this
        helps retain the texture and bright green color)
·         Mix all salad ingredients except for dressing
Dressing
¾  cup of olive oil
1 cup of loosely packed chives
¼ cup of champagne vinegar
2 garlic cloves
Salt
Pepper
 Put all ingredients in the food processor except for olive oil. Using the chop function, mix the ingredients. Then, while food processor is on, drizzle olive oil into the mixture. This will emulsify a bit but will create a dressing with the consistency of soup. Mix dressing with the salad and serve.
